Open the Table Designer with Ctrl-T.
Pull down the Commands menu. Select Delete Format.
You may want to open Help and select the Tables topic for more info...

I'm working with version 7.1 and when I go to Insert Tables there is a selection there of a table I want to delete. I was under the impression I could go to View -> Reference Page and delete the Table I want to delete that shows up in the Insert Table dialog box. The fact of the matter is that this doesn't work. Can anyone out there let me know how to delete tables I don't want to see displayed in the INSERT TABLE dialog box? Thanks for any info.

Open FrameMaker. Press ctrl+T. The Table Designer opens. Delete the tables and design new tables here.

If there are tables on a specific reference page then that's something individual to your files, perhaps just meant to be a visual guide to the various table styles (which I often do). But in standard FM, sans any plugins that do something else, those table instances are not connected in any way to FM's table format management functionality.
