Does anyone know?

Will the service and the published MSDN documentation still be appliable on
that OS?

Nope, doesn't look like it. You can get the trial running to check it out.

I did have a look at the trial, and it does only support FTP as an
additional service besides HTTP (et al).

I knew that something like this was going to happen, since the SMTP services
as of the design for IIS 7, have been transferred to Exchange.

This is no good news for the customers (maybe it is for the exchange group).

SMTP service is in w2k8 as it does in 6 on w2k3. but expect no changes and
it still runs in inetinfo.exe

To install smtp service. go server manager > add features > smtp server.

Well,

I was there, there is no smtp server feature. I will look again. (I'm
talking of build 6001 RC0)

Egbert, this feature is available in the RC0 builds I've been working with.
I reported a bug in the newsgroups or asked about it. The IIS team has been
mum, which they don't really support IIS SMTP Service anyway.

Here is a description of what I've been experiencing.

"I've been trying to figure out if anyone has seen this. Windows
Server 2008 SMTP relay restrictions can't be set on an x64 machine.
I can set the properties remotely, but they do not display or be set
on the box. I tried to un-install / reinstall, turn off UAC, Run as
Administrator. I get unspecified error.

I checked your remark, b.t.w, and indeed, SMTP is there.
