When scheduling the backup job, just pint the backup software to the cluster
name of the Exchange server and the rest will be automatic.

You will need Exchange aware backup software. For Veritas it will be extra
$$, for Microsoft, you will need to install the Exchange Admin tools on the
backup server.
An Exchange aware backup will allow you to backup the storage groups, that's
what you want to do. Backing up the individual mailboxes is pretty worthless
and not recommended.
If the backup is running on the cluster itself, then you will need to be
careful which node the backup is occurring. That's why I recommend backup
from another machine for clusters.
